Quick little cake decorating vlog for this lovely carrot cake I made the other day for my bffs bday!! I wouldn’t say decorating cakes is my forte, and especially not ones where I have to frost the sides. I usually just stick to a naked style cake but because there’s a cheesecake in the middle, the layers would have looked a bit weird if I didn’t cover them. This cake had soooo many components but it came together so nicely. The actual cake itself was a fairly robust date and nut carrot cake- moist but able to hold weight which was great. Then in the middle was a citrus cheesecake, and I made it easier for myself by freezing it solid so that it’s easier to move and frost instead of it getting really soft! I layered a miso carrot caramel and biscoff crumb with a miso & orange cream cheese frosting. I loved how the salty and sweet worked together, and it saved the cake from being sickly sweet, a problem I often find in most carrot cakes. My decorations consisted of candied carrots and dehydrated orange, and I think it’s what really gave the cake a nice look. As you can see, I was very skeptical of it as one usually is when decorating, but my roommate Beth essentially told me to get over myself… lol VALID!! Everyone’s their own worst critic!
