Season lamb with salt and pepper. Sear lamb in 1 tbsp olive oil until browned. Mix Dijon mustard, herbs, garlic, and 2 tbsp olive oil. Coat lamb with mixture, roast 15-20 mins at 55°C for medium-rare. Rest 5-10 mins, slice, and serve.
