If you look at all of the promo art it becomes unlikely their goal was realism (OOT3D especially went closer to the promo art), also twilight princess isn't realism either the characters are very stylized (look at link's anime inspired eyes). That's not to say we can't have new art styles, I hope we do and I hope they execute it correctly

It’s timing, twilight princess came out in response to windwaker being ripped on by fans for looking too cartoonish for Zelda. Today we live in a time with great nostalgia for windwaker and appreciation for stylized graphics instead of the oversaturated unreal engine look. I think people generally would rather have a new story/environment in a game that runs well than the same game they’ve played before that looks like Bethesda made it.
