Chill overnight (or 2+ hours). Top with banana and enjoy. Lunch 🌯 Rainbow Hummus Veggie Wrap Ingredients: 1 large whole-wheat tortilla · 3–4 Tbsp hummus · cucumber sticks · red bell pepper strips · shredded carrot · baby spinach · 1/2 avocado (sliced) · 1 tsp lemon juice · everything bagel seasoning Instructions: Warm tortilla 10–15 sec. Spread hummus, layer veggies and avocado, splash lemon, sprinkle seasoning. Roll tightly, slice on the diagonal. Dinner 🍝 Creamy Tomato Basil Chickpea Pasta (One-Pot) Ingredients: 10 oz short pasta (penne) · 1 can chickpeas (drained) · 1 can crushed tomatoes · 1/2 onion (diced) · 2 cloves garlic (minced) · 1 Tbsp olive oil · 2 cups vegetable broth · 1/2 cup coconut milk · handful fresh basil (torn) · salt & pepper Instructions: In a pot, sauté onion in olive oil 3–4 min; add garlic 30 sec. Stir in crushed tomatoes, broth, coconut milk, pasta, and chickpeas. Simmer, stirring, 10–12 min until pasta is al dente. Season with salt & pepper; fold in basil and rest 2 min.
