This soba has a great chewy texture and a very rich aroma. Also, their "Hiyamugi" noodles—made by mixing wheat and buckwheat flour by hand—are very smooth and have a wonderful smell of both grains. The tempura here is like art. It is fried slowly at a low temperature with a very thin batter. This keeps the vegetables and fish juicy and flavorful inside, while the outside is perfectly crispy and beautiful. The restaurant once won a Michelin one star. Now, it is listed as a Michelin Bib Gourmand, so you can enjoy this amazing quality at a reasonable price. It has also been chosen as one of the Top 100 Soba Shops on Tabelog for a long time.
