Its finally here and it's all your✨🔥 Here’s everything I used: INGREDIENTS 🛒 For the beef 🥩 • 1200g beef • 1 small onion • Thumb-sized ginger • 4 cloves garlic (smashed) • 1 tsp thyme • 1 tsp curry powder • 2 tsp salt • 2 tsp crushed chicken bouillon • ½ cup water For the roasted tomato base 🍅 • 9 medium tomatoes • 3 large bell peppers • 4 scotch bonnet peppers • 1 small red onion • 1 bulb garlic • Fresh thyme For the jollof rice 🍚 • 6 cups rice • ½ cup oil • Handful of chopped onions • 327g tomato paste • 410g blended roasted tomato sauce • 2½ tsp salt • 1 tsp crushed chicken bouillon • 1 tbsp dried thyme • 2 bay leaves • 1 tbsp curry powder • 2 cups beef stock • 2 cups water For serving 🍌 • Ripe plantain • Oil for frying THE METHOD 👩🏾‍🍳 I started by seasoning the beef with onion, ginger, garlic, thyme, curry powder, salt and chicken bouillon. I covered the pot and allowed the beef to cook in its own juices first, then added ½ cup water and simmered until it was tender. Once the beef was ready, I removed it and fried it until beautifully golden and full of flavour. I kept that same oil because all those beef flavours were now infused into it; and that became the base for the jollof. 🔥 Next, I added onions into the beef-flavoured oil, then fried the tomato paste until it became rich, dark and slightly sweet. For the smoky tomato base, I roasted the tomatoes, peppers, onion, garlic and thyme until slightly charred, then blended everything smooth. I added the roasted blend into the pot and let it simmer with salt, bouillon, thyme, curry powder and bay leaves for about 12mins. Then came the good part. I poured in the reserved beef stock, added my washed rice, mixed everything together and followed with the water. Covered tightly with foil and a lid, then allowed it to cook low and slow(40-50min) until every grain was soft, fluffy and packed with flavour. While the rice cooked, I fried ripe plantains until golden and caramelised.
