Oh my goodness! I make macaroni with butter and cheese, all of my life. The butter falls to the bottom of the bowl. I was experimenting with using pasta water to emulsify the butter so it would be like a sauce. I told myself I would never make it any other way again and here I have been making authentic Italian Fettuccine Alfredo. 🎉❤️

I always have issues reheating alfredo with it separating. I put it in a pan on low heat and it still separates. I don’t want to have to remake the sauce. When I first make it it’s great it’s just the leftovers are oily

“Alfredo pasta” isn’t much of a thing here in Italy — we cook pasta that way but it’s just referred as “pasta in bianco” (white pasta) and it’s mostly makes for Kids! The “Alfredo” bit is more American than anything else, which is fine. As long as one enjoys it, make your pasta in whatever way you want 😁
