Catholic convert here! A lot to unpack from your questions, but I love the second one as I used to have it. A saint can only hear prayers insofar as allowed by God. For example, in Revelations 7, John is given such a privilege as he is united to God by the power of the Spirit. It is God working through John, not John working with his ontological abilities. God knows that allowing Him to experience this is for the benefit of the Church. In that same way, a saint—united to Christ by the power of the Spirit—does not “have the ability” to hear all prayers in all languages at all times. It is God who is the source of everything. Being that He wants us all to pray for each other and to be united, knowing that we are under His providence by the power of the Spirit, why would He prevent someone from praying for you if it’s for the benefit of His Church? Yes asking intercession from saints are no different from asking a friend or family to pray for . Only difference with saints , they are already in heaven and in Gods grace .

The process of becoming a saint is a long and slow one. Firstly the person dies and a local bishop studies their life’s and if they lived a holy one. Then the case is reviewed by the Vatican to see if they lived a heroic life of virtue, to where the pope declares them venerable. And then usually they need to have caused two miracles that are proven miracles (healing impossible diseases etc.) thru intercession. Usually taking 20-100 years to become a saint

1st point, Christ gave Peter the keys to the church. 2nd point. When Moses parted the Red Sea was that because of his own power or rather all the credit belongs to God and he gave Moses that divine ability to do so. And since God isn’t the god of the dead but rather the living, it’s not illogical to point to God giving the living saints in heaven the ability to hear our prayers, like stated in the bible that the prayers of a righteous person is powerful!
