A classic Sunday dinner featuring a flavorful roast chicken accompanied by herb-infused roasted potatoes and a medley of seasonal vegetables. Ingredients: - 1 whole chicken (about 4 lb) - 2 tbsp olive oil - 1 tsp salt - 1/2 tsp black pepper - 2 tsp dried thyme - 2 tsp dried rosemary - 4 large potatoes, cut into chunks - 2 tbsp olive oil (for potatoes) - 1 tsp salt (for potatoes) - 1/2 tsp black pepper (for potatoes) - 1 tsp dried thyme (for potatoes) - 1 cup carrots, sliced - 1 cup green beans, trimmed - 1 tbsp olive oil (for vegetables) - Salt and pepper to taste Instructions: 1. Preheat oven to 425°F (220°C). 2. Season the chicken with salt, pepper, thyme, rosemary, and 2 tbsp olive oil. Rub evenly over the surface. 3. Place chicken in a roasting pan. Roast in the oven for about 1 hour, or until the internal temperature reaches 165°F (75°C). 4. While chicken is roasting, toss potatoes with 2 tbsp olive oil, salt, pepper, and thyme. Spread on a baking sheet lined with parchment paper. 5. About 45 minutes before the chicken is done, roast the potatoes in the oven alongside the chicken until golden and crispy. 6. In the last 15 minutes of cooking chicken, sauté carrots and green beans in 1 tbsp olive oil over medium heat until tender. Season with salt and pepper. 7.
