Season with salt and pepper, then spread the mustard directly onto the top of each patty. 💞Flip and cook for another 1-2 minutes, pressing lightly so the mustard side cooks into the meat. Add a slice of cheese to each patty and allow it to melt. 💞Lightly toast the brioche buns in a toaster. 💞To build, spread a layer of the sauce over the bottom bun, add the shredded lettuce, then stack up the cheesy patties. Spoon over the caramelised onions, finish with the remaining sauce and top with the bun.
