BROTHY HERBY WHITE BEANS & CHICKEN (GF / DF) ✨ Herby white beans with a bit of garlic and lemon are one of my absolute favorite sides to add to a meal. They’re naturally gluten free, easy to grab out of the pantry and with just a few fresh ingredients they’re transformed into a super flavorful side that goes well with chicken, fish or steak. I mixed in some kale for a bit of added greens and seared up a few chicken thighs for my protein. An easy, delicious and affordable meal I could truly eat every single week. Save and follow @caitlinjesson for easy gluten free and dairy free recipes.  4-5 bone in skin on chicken thighs ½ bunch kale, ribs removed and roughly chopped 2 cans (28 oz) cannellini beans, with liquids from one can 2 tbsp fresh thyme, roughly chopped 1 lemon, cut in half  1 bunch fresh parsley, leaves and tender stems only  3 cloves garlic, peeled ½ cup plus 2 tbsp olive oil, divided ¼ tsp chili flakes  Salt and pepper, to taste Preheat oven to 425°F.  To prep herb sauce, add parsley and garlic to a food processor and pulse until finely chopped. Transfer to a medium sized bowl and stir in ¼ cup olive oil, juice of half a lemon, chili flakes and a pinch of salt. Set aside for later.  Add 2 tbsp olive oil to a Dutch oven or braiser over medium heat. Season chicken with salt and pepper then add skin side down to your hot oil. Allow chicken to cook undisturbed until skin is golden and crispy, about 7-8 minutes. Flip chicken and cook for one minute on bottom side, then remove from pot and set aside.  Add kale to your pot and saute for 1-2 minutes until beginning to soften. Add in one can of strained beans plus a second can of beans with the liquid. Season generously with salt then stir in half of your herb sauce, fresh thyme, ¼ cup olive oil and juice of ½ lemon.  Bring beans to a simmer then return chicken to your pot and transfer to the oven to finish cooking uncovered for 20 minutes.  Remove from the oven and serve alongside the remaining herb sauce.
