Ingredients: * Your favorite fish * Salt * Oil * Firm tofu * Red onion * Onion * Peeled Roma tomatoes * Chilli * Black pepper * Fish sauce * Fermented bamboo shoots * Tamarind extract * Instant noodles Instructions: 1. Rub the fish with salt. Heat oil in a pot and fry the fish and cubed tofu until crispy. Remove and set aside. 2. In the same pot, caramelize the sliced red onion and onion. Remove and set aside. 3. Deglaze the pot with water. Add the fish bones and scraps, season lightly with salt, and simmer to make a broth. 4. Add the broth to another pot along with the chilli, caramelized onions, pepper, fish sauce, chopped tomatoes, fermented bamboo shoots, and tamarind extract. Bring to a boil and simmer briefly. 5.
