Ingredients: * Deboned free-range hen * Ground mustard & fennel seeds * Oil * Salt & pepper * Chilli & garlic * Cloves * Rosemary * Red wine * Water * All-natural ketchup * Butter * Free-range chicken broth * Honey * Sliced onions * Sliced eggplant * Rice Instructions: 1. Rub chicken with oil, salt, pepper, mustard, and fennel. Set aside. 2. Fry skin-side down with a weight until crispy. Remove. 3. Fry chilli, garlic, cloves, and rosemary. Deglaze with red wine and water. 4. Crush and strain. Add ketchup, butter, chicken broth, honey, salt, and pepper. Simmer until thick. 5. Grill chicken slowly over charcoal, basting the meat side with sauce until cooked through. 6. Toss onions and eggplant with oil, salt, and pepper. Grill until tender. 7.
