We visited a plum farm in Wolddeung-myeon, Suncheon, together with the firefighters. The farm was located deep in the mountains—really up on a high peak. It was quite a large farm, and normally it is managed and harvested by just four family members. Thinking about how they carefully grow and harvest the plums all year long, working tirelessly under the hot sun, made me realize how precious our food really is. It made everything feel even more meaningful and valuable. They handed me a 10 kg box filled to the brim with freshly harvested plums, and because I knew how carefully they were grown, I felt deeply moved the whole time I was holding it. I even bought two more boxes to make plum syrup for my mother-in-law and my mom! ✔️ Making Plum Syrup (Maesil-cheong) 🥣 Ingredients 10 kg plums 9 kg sugar 1.2 kg oligosaccharide syrup 👩🏻‍🍳 Instructions Wash the plums thoroughly. Soak them in vinegar water for about 5 minutes. Rinse them again and dry them completely (no moisture should remain, or it may cause mold or fermentation issues). Remove the stem ends (the black tip) using a toothpick. Sterilize the container and dry it completely. Place a layer of plums in the container, add 1.2 kg of oligosaccharide syrup, and mix evenly. Layer plums and sugar alternately. Finish by covering the plums completely with enough sugar. Cover with a cloth to prevent insects and lightly close the lid. 🫙 Storage tips For the first month, gas may form, so do not seal the lid too tightly. Store in a cool place away from direct sunlight. Gently shake the container occasionally to help the sugar dissolve. It is best to consume after about 10 months. ❤️ ---------------------- 소방관님과 함께 일손을 도우러 간 곳은 순천 월등면에 있는 매실농장인데 정말 산 꼭대기에 있는 농장이었어요. 농장이 꽤나 넓었는데 그 넓은 농장을 평소에는 4명의 가족분들이 직접 관리하고 수확을 하신다고 해요 . 1년 동안 정성껏 길러낸 매실을 무더운 햇볕 아래에서 쉬지 않고 수확해 주시는 분들이 계시기에 우리가 이렇게 귀한 먹거리를 맛볼 수 있는 거구나 생각하니 모든 것이 더 소중하게 느껴지더라고요. 그렇게 귀하게 기르고 수확한 매실을 10kg박스 가득 와르르 담아서 제 손에 쥐어주시는데 귀하게 키운 매실이라는 걸 알기에 받는 내내 마음이 참 뭉클했습니다. 시어머님하고 엄마도 매실청 담아드리려고 2박스 더 사왔어요!!! ✔️매실청 담그기 🥣 재료 매실 10kg 설탕 9kg 올리고당 1.2kg 👩🏻‍🍳만드는 법 1.매실을 깨끗하게 씻어주세요. 2.식초물에 5분 정도 담가둡니다. 3.다시 깨끗이 헹군 뒤 물기 없이 완전히 말려주세요 (물기가 남아 있으면 곰팡이나 발효 문제가 생길 수 있어요) 4.이쑤시개로 꼭지(꼭지 부분의 검은 심지)를 제거해 주세요. 5.담금용기는 깨끗이 세척한 후 물기 없이 완전히 건조해 준비합니다. 6.용기 바닥에 매실을 깔고 올리고당 1.2kg를 넣어 골고루 버무려 주세요. 7.매실과 설탕을 켜켜이 담아줍니다. 8.마지막에는 매실이 보이지 않을 정도로 설탕을 충분히 덮어주세요. 9.벌레가 꼬일 수 있으니 면포를 덮고 뚜껑을 살짝 잠가주세요 🫙보관 팁 * 처음 1개월은 가스가 발생할 수 있으니 뚜껑은 너무 꼭 잠그지 않아요 * 직사광선을 피해 서늘한 곳에 보관해 주세요 * 설탕이 녹을 때까지 가끔 용기를 살짝 흔들어주면 좋아요. * 10개월 이후 드시면 됩니당❤️ - @yuyutime_
