Ingredients: 2 lb of beef shank with bone 2-3 lb of beef stew meat 8-10 c water 1/2 onion 1 garlic head 3 bay leaves Salt to taste 3 tbsp Tomato Bouillon Veggies of your choice: (I used): 4 celery (diced) 1/3 cabbage 1.5 c baby carrots (I normally use regular carrots but I only had this) 4 corns cut in half 1 zucchini (I only used one bc I’m the only one that likes it lol) 3-4 potatoes sliced 1 tomato (optional) Directions: 1. In a large pan, on high heat, brown your carne on both sides. Add in your water, with 1/2 your onion, garlic head, & bay leaves. Let it come to a boil. (If there’s the nasty gunk, make sure to remove that with a spoon). 2. Add in your salt & tomato bouillon. Let it simmer on medium-low for about an 1.5 hours, then add in your tomato. Let it boil for 30 mins before taking it out & blending the tomato. Add the tomato purse back into your broth. 3. After 2 hours, add in your corn, potatoes, & carrots. Let it simmer for 15-20 mins. The add in your zucchini, cabbage, & celery. Let it simmer for 5-10 mins before adding your cilantro & any extra salt or seasoning. 4. Enjoy with Mexican rice!
