Moist banana bread with a crackly cinnamon sugar top?! Say less! Save this banana bread recipe for the next time you have ripe bananas! 🍌 #bananabread #Recipe #banana #bread #carnationmilk Banana Bread Ingredients 1 cup of ripe mashed bananas (from about 2-3 bananas) 1 cup granulated sugar 1 teaspoon cinnamon ¼ teaspoon nutmeg 8 Tablespoons salted butter, melted and cooled slightly 2 large eggs 1 Tablespoon vanilla extract 2 ¼ cups all-purpose flour 1 teaspoon baking powder 1 teaspoon baking soda ¼ teaspoon salt ½ cup Carnation Evaporated Milk ¼ cup water Topping: 3 Tablespoons sugar ½ teaspoon cinnamon How to make moist banana bread 1. In a large bowl, add mashed bananas, sugar, cinnamon, and nutmeg. Whisk until incorporated. Slowly stream in the melted butter while whisking. Whisk until the butter is fully incorporated. 2. Add the eggs one at a time, whisking in between each addition until fully incorporated. Add the vanilla extract and whisk until smooth. Add the Carnation Evaporated milk and water to a measuring glass, set aside. 3. In a medium bowl, add the flour, baking powder, baking soda, and salt. Whisk until combined. 4. Add half of the flour mixture to the wet ingredients and fold until just incorporated. Add half of the Carnation Evaporated Milk mixture and fold until incorporated. Repeat with the remaining flour, followed by the remaining Carnation Milk mixture, folding until there are no more dry pockets of flour in the batter. 5. Cover with a clean kitchen towel and allow the batter to rest for 30 minutes. Allowing the batter to rest will allow the flour to absorb all of the ingredients, resulting in a more flavorful banana bread. 6. While the batter is resting, preheat the oven to 350 degrees. Grease a 9x5 loaf pan with nonstick spray and line with parchment paper, allowing some overhang. In a small bowl, add the cinnamon and sugar for the topping and mix until the cinnamon is evenly distributed. Set aside. Pour the rested batter into the prepared baking pan. Sprinkle the top with the cinnamon sugar mixture and tap the pan against the counter to release any air bubbles out of the batter. 7. Bake at 350 degrees for about 60 minutes or until a toothpick or cake tester comes out clean. Allow the banana bread to cool in the pan for 10 minutes, then use the parchment paper overhang to lift the banana bread out of the pan onto a cooling rack to cool completely. *Storage suggestions: Store leftover banana bread at room temperature in an airtight container. If it’s very warm or humid out, we suggest wrapping tightly and storing in the fridge. Warm in the microwave or toaster oven before serving.
