Smokey Sausage Mac & Cheese Soup I am definitely guilty of overusing the phrase ‘hug in a bowl’ but honestly, there is no better way to describe this one. I need proper comfort food this week and what could be more comforting than a big bowl of cheesy sausage and pasta soup...with a gooey golden cheese topping. We had this with my French Onion Herb Bread - A really easy no-knead bread that's perfect with creamy soups. Let me know in the comments if you'd like me to write up the recipe for the bread - in the meantime, the soup recipe's below. I hope you love it! A x Feeds 4 1 onion finely chopped 8 pork chipolatas each cut into 7 or 8 pieces (you can leave the skins on) 40g plain flour 2 tsp paprika 800ml chicken stock 700ml milk 130g dried macaroni 100g of grated cheese (I used 70g cheddar and 30g of mozzarella) plus extra for the topping 1 tbsp finely chopped chives Heat a drizzle of oil in a large, non-stick saucepan with a lid Add the onion and chopped chipolatas. Fry on a medium heat for 7 minutes until the onion is soft and the sausage is starting to get some colour. Stir in the flour and the paprika on the heat, until everything is coated and the mixture is starting to sizzle. Add a third of the stock. Stirring continuously until it comes to the boil and thickens. Continue doing this until all of the stock is used up. Stir in the milk. Add the macaroni and season with salt and pepper and give it a good stir. Place the lid on the pan and bring it to the boil. Simmer for around 15 minutes, stirring regularly so that the pasta doesn't stick to the bottom of the pan. When the pasta is cooked, stir in the grated cheese and finely chopped chives.  Divide the soup between 4 bowls Heat the grill to medium Carefully sprinkle some grated cheese on top and grill for a few minutes until golden and bubbling.
