Cheesy tomato eggs over toast Welcome to my egg series number 1 Not everything has to be an omelette or scrambled eggs! This breakfast is sure to keep you fit healthy and full! And never boring! Perfect for brunch ! 1. Two tomatoes, sliced medium thick 2. 2 to 3 eggs 3. Handful of cheese 4. Half a teaspoon salt and pepper, 1 teaspoon cumin and paprika 5. Optional garnish, parsley, or cilantro 6. Serve with toast 1. Slice your tomatoes to a medium thick thickness 2. Shred your cheese 3. In a pan on medium low heat at olive oil . 4. Place your eggs in your pan. Cook on medium heat after about 1 to 2 minutes you want to flip the eggs to cook on both sides. Use a lid to keep in the heat will help release the skin. 5. Remove the lid and carefully remove the skin. This is an optional you do not have to remove the skin of the tomato. 6. Sprinkle your seasonings over the tomatoes. 7. Gently mashed the tomatoes. 8.
