Braised Beef Short Ribs with Creamy Garlic Mashed Potatoes & Garlic Bread 🔥 probably one of my favorite meals i’ve made 🤌🏼 Ingredients Braised Short Ribs * 3 lbs beef short ribs * Kosher salt, to taste * Freshly cracked black pepper, to taste * 1 tbs neutral cooking oil * 1 cup diced carrots * 1 cup diced celery * 4 cloves garlic, thinly sliced * 6 cups beef stock * 2 bay leaves * 2 sprigs fresh rosemary Creamy Garlic Mashed Potatoes * 4 lbs russet potatoes, peeled and cut into cubes * Water, for boiling * Salt, for the boiling water * 1½ sticks (¾ cup) salted butter * 1 cup heavy cream * 1 tbs garlic paste * ½ tsp salt * ¼ tsp black pepper Sauce * Reserved braising liquid * ¼ cup water * 1 tbsp cornstarch Garlic Bread * 1 fresh French bread loaf, sliced into 1-inch slices * ½ stick salted butter, softened * ½ tbs garlic paste * 2 tbs chopped fresh parsley Instructions 1. Braise the Short Ribs • Preheat the oven to 325°F (163°C). • Season the short ribs generously on all sides with kosher salt and freshly cracked black pepper. • Heat a large Dutch oven or heavy-bottomed pot over medium-high heat and drizzle in the oil. Sear the short ribs on every side until a deep golden-brown crust develops. Remove the short ribs and set aside. • In the same pot, add the diced carrots, celery, and sliced garlic. Cook for 3–4 minutes, scraping the bottom of the pot to release all of the flavorful browned bits left behind from the meat. • Return the short ribs to the pot and pour in the beef stock. Add the bay leaves and rosemary sprigs. Bring the liquid to a gentle simmer, then cover with a lid and transfer to the oven. • Braise for 3 hours, or until the short ribs are fork-tender and easily pull apart. 2. Prepare the Mashed Potatoes • While the short ribs are finishing, place the peeled and cubed potatoes into a large pot of salted water. • Bring to a boil and cook until the potatoes are fork-tender. Drain thoroughly. • In a small saucepan, combine the butter and heavy cream. Heat until the butter has melted and the mixture is just beginning to simmer. • Mash the potatoes until smooth, then slowly pour in the warm butter and cream mixture. Add the garlic paste, salt, and black pepper, mixing until silky, creamy, and fully incorporated. 3. Make the Sauce • Remove the short ribs from the braising liquid. • Strain the vegetables from the liquid and discard them, reserving only the flavorful stock. • Pour the stock into a saucepan over medium heat. • Whisk together the water and cornstarch until smooth, then slowly stir the slurry into the simmering stock. Continue stirring until the gravy thickens enough to coat the back of a spoon. 4. Make the Garlic Bread • In a small bowl, combine the softened butter, garlic paste, and chopped parsley until evenly mixed. • Spread the garlic butter generously over both sides of each slice of French bread. • Toast on a hot skillet or griddle until both sides are golden brown and crisp. 5.
