You can find Palm Corned Beef at many retailers across Canada, including Walmart, Loblaws, No Frills, and more! INGREDIENTS: 1 x 326g can Palm Corned Beef 1 small onion 3 cloves garlic 1/4 cup breadcrumbs 10-12 sprigs thyme 1 tbsp Dijon mustard Salt & pepper (to taste) 450g ground pork 6 + 2 large eggs 1 cup flour 2 cups panko 1L neutral, high-smoke point oil (if frying) OR: Neutral, high-smoke point spray oil (if air-frying) INSTRUCTIONS: 1) Bring a large pot of water to a roiling boil over medium heat. Add your eggs, and set a timer for 6 minutes and thirty seconds. While your eggs are cooking, prepare a large ice bath. Once your eggs are ready, shock your eggs in the ice bath to stop the cooking. When fully cooled, carefully peel your eggs.  2) Finely dice your onions and garlic. Sauté over medium-low heat in 1 tbsp of oil until translucent. Let cool in a container in the fridge.  3) In a large chilled mixing bowl, mix your Palm Corned Beef, sautéed onions and garlic, breadcrumbs, thyme leaves, dijon, and ground pork. Once well combined, set to the side. 4) On a clean work surface, spread out a large sheet of plastic wrap. Add a handful of your sausage mix (approx. double the size of your egg). Fold half the plastic wrap over the sausage, and flatten it out to about 1cm thick with a rolling pin. Unfold the plastic wrap, and place your peeled soft-boiled egg in the middle of the sausage. Wrap the sausage tightly around the egg, sealing it with your fingers, and discarding any excess sausage (you want the thickness of the sausage to be the same all the way around).  5) To bread your eggs, prepare three separate trays with your flour, panko, and 2 eggs well beaten. After going once into each, go into the egg a second time, then the panko as well. 6) Fry/air fry at 350 degrees Fahrenheit for 3-4 minutes (until golden), then transfer to a 350 degree oven for another 4-6 minutes, or until the internal temperature of the sausage reads 55 degrees Celsius with a thermometer. Let the Scotch egg rest for 4-5 minutes before cutting it. Serve hot, and enjoy! #scotchegg #Recipe
