Preheat oven to 400°F. Add sliced onions to a large oven-safe skillet or baking dish and coat thoroughly with ¼–⅓ cup olive oil. Season with salt, pepper, paprika, and dried parsley, then toss well. Cover tightly with foil and roast for 1 hour, stirring halfway through, until deeply caramelized, soft, and golden brown 2. While the onions roast, add chicken thighs to a bowl and toss with 2 tablespoons olive oil, balsamic vinegar, garlic, thyme, salt, and pepper. Set aside to marinate 3. Remove onions from the oven and place the skillet over medium-high heat. Add the remaining 1 tablespoon olive oil and sear the chicken thighs for 1–2 minutes per side until lightly golden. Transfer to a plate 4. Reduce heat to medium and add 1½ cups orzo to the skillet. Toast for 1–2 minutes, then stir in the caramelized onions, 2 cups chicken stock, and 1 cup heavy cream. Bring to a gentle simmer 5. Nestle the chicken thighs into the orzo mixture.
