Frozen Bean & Cheese Burritos Per Burrito (Makes 12): 380 Calories 33g Protein 62g Carbs (33g Fiber) 14g Fat This is the recipe I developed @Counter. for our high protein frozen bean & cheese burritos, which are now nationwide in Target!! But I wanted to give y’all the recipe in case you can’t find them yet 🤝 — Beans 30g (2 Tbsp) butter 10 cloves garlic, minced or grated  2250g (5 cans) pinto beans, drained 800g (2 jars) green enchilada sauce 113g (4 oz / 1 can) green chiles 1 Tbsp nutritional yeast 1 Tbsp onion powder 1 Tbsp salt (adjust to taste) Cheese 360g (1 1/2 cups) cottage cheese 300g (3 cups) fat free mozzarella 226g (2 cups / 1 block) Monterey Jack Tortillas 15 low carb burrito-size tortillas ⸻ Instructions 1.) Heat a large pot over medium heat. Add butter and garlic and cook for 1 minute until fragrant. Add drained pinto beans, green enchilada sauce, green chiles, nutritional yeast, onion powder, and salt. Cook over medium-low heat for about 30 mins, stirring occasionally, until very thick and all liquid has reduced, then mash the beans directly in the pot until thick and cohesive  2.) Add the cottage cheese, mozzarella, and Monterey Jack. Stir until fully melted and combined 3.) Transfer the filling to a bowl and let cool for 15-20 mins. The longer you let the filling cool/thicken, the easier the burritos will be to roll 4.) Lay out the tortillas and divide the filling evenly between them (about 165g filling per burrito), then roll tightly  Optionally, toast in a pan until lightly golden - this will improve flavor but you could also pan fry when reheating instead 🤝 REHEAT INSTRUCTIONS (from frozen): Microwave for 2 mins, then air fry at 350°F for 6–7 minutes until the tortilla is crispy and the interior is warmed all the way through #stealthhealth #frozenburrito #burritomealprep #highproteinrecipe
