I make this tomato tart so often and it’s always a winner. You can also do delicious variations - I sometimes use very thin slices of courgette and onion instead of tomato or finish it with mozzarella, rocket or goats cheese. Ingredients:
 The equivalent of 4–6 medium tomatoes, made up of any kind of tomato you like, 2–3 handfuls of cherry or 2–3 large beefsteak 
 4 tbsp extra virgin olive oil
 2 tbsp balsamic vinegar 
 3 cloves of garlic, crushed
 Salt and pepper
 3 sprigs Fresh thyme
 A sheet of ready-rolled puff pastry
 3 tbsp Dijon mustard
 50g grated Parmesan or Gruyère/Comte (or both!)
 
 Preheat the oven to 220°C/200°C fan. Thinly slice the toms. 
 Mix together the oil and vinegar add the crushed garlic, a good pinch of salt and half the fresh thyme leaves
 Unroll your sheet of pastry and pop it on a baking sheet. Leave the pastry on the baking paper it came in, to prevent it sticking. 
 Take a sharp knife and score a border around the edge of the pastry approximately 2cm wide, being careful not to cut all the way through the pastry. Then, with a fork, stab holes in the surface of the pastry 
 Dollop on your mustard and spread it out across the pastry, minus the border. 
 Drizzle the oil and vinegar mixture over the mustard, then sprinkle on the grated cheese. 
 Finally take your tomato slices and lay them in rows – don’t overlap them, but pack them closely together so there are no gaps between slices. 
 Finish by brushing the pastry border with a little olive oil and add a final drizzle of oil over the tomatoes, with the remaining thyme and a sprinkle of salt. 
 Pop the tart into the oven for 25 minutes, until the pastry is a deep golden brown
