@nidhicooks: 🥒 Tindora nu Shaak (Gujarati Ivy Gourd Stir-Fry) A simple, flavorful Gujarati-style tindora (ivy gourd) sabzi that’s perfect with rotli, thepla, or dal-rice. 🧂 Ingredients * 400 g tindora (ivy gourd), washed and sliced * 2 tbsp oil * 1 tsp mustard seeds * 1 tsp cumin seeds * ¼ tsp hing (asafoetida) * 5–6 garlic cloves, crushed * 1 medium tomato, crushed * 1 tsp red chili powder (adjust to taste) * 2 tsp cumin-coriander powder * ½ tsp turmeric powder * 1 tsp garam masala * Salt, to taste * 2–3 tbsp roasted peanut powder * 1–2 tbsp roasted sesame seed powder * Fresh coriander, chopped (for garnish, optional) 👩🍳 Method 1. Heat oil in a pan. Add mustard seeds and let them splutter. 2. Add cumin seeds and hing, then stir in the crushed garlic. Sauté until fragrant and lightly golden. 3. Add the crushed tomato and cook until the oil begins to separate. 4. Mix in the red chili powder, turmeric, cumin-coriander powder, garam masala, and salt. 5. Add the sliced tindora and mix well so it’s coated with the masala. 6. Cover and cook on low-medium heat for 12–15 minutes, stirring occasionally, until the tindora is tender. 7. Sprinkle in the roasted peanut powder and roasted sesame seed powder. Mix well and cook for another 2–3 minutes. 8.
