This is basically adobong puti with achuette for anyones curious about the taste. Vinegar is stronger than the achuette and u wont taste it. Honestly achuette only adds color haha idk why we have so much dishes with that but it makes it look tastier

This is the Adobo I grew up with in Iloilo. Ilonggos' love for atsuete is part of our culture and yes we also call it Adobo sa Dilaw in Tagalog but for Ilonggos it is simply adobo. We normally use chicken (native most of the time) and pork but you can also have it with batikulon and atay or unhatched chicken egg and kasudlan. When I studied in Manila back in college in the late 90s nagulat ako na toyo-based ang adobo hindi dilaw... 😅

Ground asuette? Nag brah, doesn't it get gritty? Or more bitter? For us we put them in a strainer and dip the strainer in the simmering pot, or you can do an herb pouch as well, it gets all the flavor without the unedible parts

technically soy sauce came to PH first through the Chinese traders before achuete through the Galleon Trade. I think adobong puti would be historically accurate adobo but don't get me wrong, annatto seed makes adobo taste better
