@basbites_: ❤️💚 Gazpacho Duo (2 servings) Ingredients Red Gazpacho • 3 tomatoes • 3/4 red bell pepper • 1/2 red onion • 1 red jalapeño (optional) • 1 garlic clove • 2 slices of bread • 3 tbsp olive oil • 3 tbsp red wine vinegar • Salt & pepper to taste Green Gazpacho • 3 green tomatoes • 3/4 green bell pepper • 1/2 cucumber • 1 shallot • 1 green jalapeño • 2 slices of bread • 3 tbsp olive oil • 3 tbsp white wine vinegar • Salt & pepper to taste Garnish • 1/4 red bell pepper • 1/4 green bell pepper • 1/2 red onion • Handful of basil leaves • 1 lime • 6 shrimp Recipe 1️⃣ Add all the ingredients for the red gazpacho to a blender and blend until as smooth as possible. 2️⃣ Repeat the same process for the green gazpacho. Taste and adjust seasoning if necessary. 3️⃣ Finely dice the remaining bell peppers and red onion. Mix with the juice of 1 lime, chopped basil leaves, a drizzle of olive oil, salt and pepper. 4️⃣ Butterfly the shrimp and grill them until slightly charred. 5️⃣ Place the bell pepper mixture in the center of the plate and arrange the shrimp on top. 6️⃣ Carefully pour the red and green gazpacho on opposite sides so they stay separated and create that beautiful contrast.
