Episode 9 - one tray salmon feta pasta🍣🤌🏼 This is one of those meals that is so simple and perfect for throwing in the oven after a long day😍 enjoy for 569 calories & 31g protein per serving!! Makes 3 servings Ingredients - 2 salmon fillets - 2 tbsp green pesto - 200g baby plum tomatoes - 150g feta cheese - 1 tbsp olive oil - 150g dried pasta (I used farfalle) - 100ml reserved pasta water - 1 tsp mixed herbs - 1 tsp garlic powder - Salt & black pepper - Handful of fresh parsley, chopped Method - Preheat your oven to 200°C. - Place the salmon fillets, feta and tomatoes in a baking dish and spread the pesto over the salmon. - Drizzle with olive oil and bake for 25-30 minutes until the salmon is cooked through, the tomatoes have softened and the feta is lightly golden. - Meanwhile, cook the pasta according to packet instructions, reserving 100ml of pasta water before draining. - Remove the baking dish from the oven and use a fork to flake the salmon and mash the feta and tomatoes together to create a creamy sauce. - Add the cooked pasta, reserved pasta water, mixed herbs, garlic powder, salt and pepper. Mix well until everything is coated in the creamy sauce. - Finish with fresh parsley and another pinch of salt & black pepper before serving.
