Back with my bestie serving up one of the most important dishes in a Chinese household - egg fried rice 蛋炒饭. There are many variations of this dish, especially in different regions of Asia, and you’ll most likely have tried a simple egg fried rice dish from your local Chinese takeaway. However, as mum’s Malaysian Chinese we had to ofc include a bit of soy for that extra magic 🍚✨ 📍 Wok Inn, Sheffield (S12 3DZ)  Note: day-old rice is best to use as the dry texture is better for frying so you won’t end up with soggy rice. The technique of seasoning the wok creates a natural non stick layer, ensuring you can cook over high heat AND creates that essential wok hei ✨ Serves 2

1 large bowl of day old cooked jasmine rice  2 eggs 1/2 tsp salt 1/2 tsp msg 1/2 tsp white pepper  1/2 - 1 tbsp chicken bouillon powder  1 tbsp dark soy sauce
1 tsp light soy sauce 1 tbsp sesame oil 1 ladle of veg oil + 2 tbsp veg oil Spring onions, crispy shallots and chilli oil to serve @mamayuoil Heat up your wok on medium heat with a ladle of veg oil, swirl the oil around the wok, then drain the oil and add 2 tbsp veg oil (chef’s tip - see note). Add the beaten egg, wait 10 seconds then lightly scramble and add sesame oil. Add your rice, use a ladle or spatula to separate the rice into smaller pieces, add the remaining seasonings and fry for 3-5 minutes depending on how high your heat is (mix well so every grain has been incorporated). Serve with spring onions, crispy shallots and chilli oil.
