This came about for two reasons: I found the fish kettle at the back of my cupboard; I found some fenugreek leaves on the market. This was a really special dinner. In the likely event that you don’t have a fish kettle, you could do the whole thing in a foil papillotte instead. For the fish broth: Onion Garlic Ginger Chilli powder Turmeric Cumin Coriander powder Fenugreek leaves Salt Peppercorns Cardamom pods Cinnamon stick Coconut milk For the fish rub: Garlic Fresh chilli Paprika Salt Cumin Coriander powder Tamarind paste Coconut oil #steamedfish #tamilfood #trout #coconut
