A hearty, kid-friendly, vegetarian Mexican chili that is quick, budget-friendly, and perfect for a family meal. Ingredients: - 1 tablespoon olive oil - 1 large onion, chopped - 3 cloves garlic, minced - 2 bell peppers, diced (preferably mixed colors) - 2 zucchinis, diced - 2 carrots, diced - 1 can (15 oz) black beans, drained and rinsed - 1 can (15 oz) diced tomatoes - 1 cup corn kernels (fresh or frozen) - 2 teaspoons chili powder - 1 teaspoon cumin - 1 teaspoon paprika - 1/2 teaspoon oregano - Salt and pepper to taste - Optional: shredded cheese, sour cream, chopped cilantro for serving Instructions: 1. Heat olive oil in a large pot over medium heat. 2. Add chopped onion and sauté until translucent, about 3-4 minutes. 3. Add minced garlic and cook for another minute. 4. Stir in diced bell peppers, zucchinis, and carrots, cook for about 5 minutes until vegetables start to soften. 5. Add black beans, diced tomatoes (with juice), corn, chili powder, cumin, paprika, oregano, salt, and pepper. 6. Stir well to combine all ingredients. 7. Bring to a boil, then reduce heat and simmer uncovered for about 20 minutes, stirring occasionally. 8. Taste and adjust seasoning as needed. 9.
