One of the world’s most iconic savoury sauces is mole—a centuries-old sauce from Mexico. Despite what many think, chocolate isn’t there to make it sweet. Instead, it adds richness, earthiness and depth, balancing spices, chillies and roasted ingredients into something beautifully complex. For this dish, I wanted to borrow that idea. 🥩 A pan-grilled boneless ribeye, finished with a rich chocolate mole, crisp snowflake potatoes and fresh microgreens. 🌍 Different cultures. 🍽️ One plate. 📖 One story.
