Add the egg, Worcestershire sauce, garlic powder, onion powder, paprika, black pepper and salt. toss until thoroughly coated. Leave to marinate for at least 30 minutes, or overnight for more flavour. Make the coating: In another bowl, combine the flour, cornstarch and the same seasonings. Coat the wings: Remove each wing from the wet mixture, letting any excess drip off, then toss thoroughly in the seasoned flour mixture. Press the coating onto the chicken so you get a nice, crispy crust. Fry: Heat oil to around 175°C/350°F. Fry the wings in batches so you don't overcrowd the pan. Cook until deeply golden, crispy and cooked through, about 8–12 minutes, depending on size. Drain on a wire rack or paper towels. Make the garlic butter: Melt the butter in a pan over medium-low heat. Add the minced garlic and thyme and gently cook for 1–2 minutes until fragrant. Don't let the garlic burn. Make the Parmesan sauce: Add the mayonnaise, Parmesan and chopped parsley to a bowl. Pour in the warm garlic butter and mix until smooth and creamy. Season with a little black pepper if needed. Toss the wings: Add the freshly fried chicken wings to the garlic Parmesan mixture and toss until every wing is coated. Make the ranch: Mix the mayonnaise, sour cream, milk/buttermilk, garlic, parsley, dill, onion powder, black pepper, salt and lemon juice. Add a little more milk if you want a thinner dipping sauce.
