The shop serves Hachioji ramen with chopped onion, along with tsukemen and small rice bowls. This time, we featured the spicy tsukemen. The soy sauce-based dipping soup combines chicken bones, pork bones, seafood and vegetables, with fragrant lard and chopped onion sweetness. The custom-made flat noodles use whole wheat flour and have a chewy texture. They pair well with the rich, slightly sweet and sour dipping sauce. Add the fresh chili on the side for a clean heat that sharpens the soup. Chopped onion, shiraga negi, menma, chopped chashu and a soft-boiled egg add changing textures and flavors. This time, we ordered the extra-large size and added yuzu. The citrus aroma matches the spicy soup and keeps it light until the end. For soup wari, you can add onion or chopped chashu.
