To make Nasi Lemak. Combine the rice, coconut milk, water, ginger, lemongrass, pandan leaves and salt in a rice cooker. Cook until the rice is done. Let it rest for 10 minutes, then fluff the rice before serving. 2. To marinate Curry Lemongrass Chicken. In a bowl, mix the chicken thighs with curry powder, ground turmeric, light soy sauce, oyster sauce, fish sauce, sugar, sesame oil and finely chopped lemongrass. Marinate for at least 30 minutes, or overnight for better flavour. 3. Heat OKI Premium Sunflower Oil in a frying pan over medium heat, Place the chicken skin-side down and pan-fry for 5–6 minutes until golden brown and crispy. Turnover and cook for another 4–5 minutes until fully cooked through. Add the curry leaves during the last minute of cooking and fry until fragrant. Remove and set aside. 4. Use the remaining oil in the pan to fry the egg. 5. To serve. Place the nasi lemak rice on a serving plate. Add the curry lemongrass chicken, fried egg, sambal, peanuts, cucumber slices and achar.
