Homemade Belgian Waffles
Ingredients
2 eggs, separated
2 cups buttermilk
1/4 cup neutral oil
1/4 cup (2 oz) unsalted butter, melted
1 TB vanilla extract
1 1/2 cups all-purpose flour
1/2 cup cornstarch
1 TB baking powder
1/2 tsp salt
1/4 cup granulated sugar
1/4 cup light brown sugar
Instructions
Separate the eggs. Place the egg whites in a clean mixing bowl and the yolks in a large bowl.
Sift together the flour, cornstarch, light brown sugar, baking powder, and salt.
Gradually add the granulated sugar to the egg whites while whipping until stiff peaks form.
Whisk together the egg yolks, buttermilk, oil, and vanilla.
Pour the wet ingredients into the dry ingredients and mix until mostly combined.
Slowly drizzle in the melted butter while mixing until incorporated. Do not overmix; a few small lumps are perfectly fine.
Gently fold the whipped egg whites into the batter in 2–3 additions until no large streaks remain.
Preheat a Belgian waffle iron thoroughly. Lightly grease if needed.
Pour 8–9 oz of batter into the waffle iron and cook until the waffles are deep golden brown and the steam has mostly stopped.
Serve immediately
