Toss and cook for about 1 minute. -Add the Thai curry paste and cook for another minute. Stir everything together well for about 30 seconds until combined and fragrant. -Add the bell peppers, jalapeño, ginger paste, curry powder, paprika, salt, and black pepper. Stir well and cook for about 3 minutes. -Pour in the coconut milk. Add a small splash of water to the empty can, swirl it around to get the remaining coconut milk, and pour it into the pan. -Add the lime zest and lime juice. Stir well and let everything simmer for another 3-4 minutes over medium-high heat until the sauce thickens and the chicken is fully cooked.
