most delicious winter soup🍲 Recipe I followed —  Ingredients: 3 tbsps oil @Rich Glen  1 onion, diced 4 celery sticks, diced 1 leek, only white / light green part, thinly sliced 4 carrots, thinly sliced 1 cup frozen peas  1 tbsp pepper (I like the brand ‘Aussie Pepper’ kibble)  2 tbsp salt flakes @Murray River Salt  Garlic & herb seasoning @Mingle Seasoning  3 garlic cloves, sliced 2 tbsp paprika 2 tbsp turmeric powder  1 tbsp dried parsley  1/4 cup fresh parsley, finely chopped 1/4 cup coriander, finely chopped 400ml coconut milk 6 cups chicken stock  (To be honest, I just eyeball all my seasonings xx)  600g chicken breast @OUR COW #gifted (cut each breast into 2-3 even sections)  Juice of 1 lemon  (Other vegetables of your choice optional, such as zucchini)  1. Using a large dutch oven / soup pot. Place olive oil over medium heat. Sauté vegetables and 1 tbsp salt flakes until leeks  caramelise (approx 15 minutes). Add fresh sliced garlic, turmeric, and seasoning, stir for another 2-3 minutes.  1. Heat oil in a large cast iron oven oven / soup pot. Sauté vegetables (carrots, onions, leeks, celery) and 1 tbsp salt flakes for 15 minutes.Add fresh garlic, turmeric, and seasoning.Stir for 2–3 minute 2. Pour in broth, coconut milk, and chicken.Submerge chicken and partially cover pot. Simmer on low for 15 minutes. Do not let boil vigorously.  3. Remove chicken, ensure it is cooked. Turn off heat. Shred chicken then add back to soup.  4. Add remaining ingredients — salt, pepper, coriander, fresh parsley, lemon juice. Enjoy!
