China has a lot of power generation, because Chinese has a lot. In fact, the per capita power generation in China is very low.

Its an interesting graph to look at without any context and prior knowledge but starts to look even more interesting when you know the countries’ electricity needs. The USA has the highest power consumption per capita in the world at around 12,000 kWh/year, mostly because most people live in bug single family houses with large bills for lights, heating, and especially air conditioning. And a high consumption lifestyle obviously. China on the other hand has a much smaller energy consumption per household, most people live in apartments and not single family detached houses, but there are more than a billion people so even if the average person needs less electricity the total energy needed is still huge.

this chart is kind of deceptive in that hydro isn't reflective of current efforts by countries to move away from fossil fuels. Brazil and Canada are two countries massively distorted by historic easy-install hydro, and doesn't reflect grid change ala your example of Australia.
