@westafricavibesgh: #creatorsearchinsights #westafricanvibes😋 #*Pork light soup* is a Ghanaian clear, spicy soup - "light" because it has no palm nut or groundnut base. It’s soupy, peppery, and usually eaten with fufu, banku, or rice. *Ingredients - Serves 4-5* *Main Protein* - *Pork* - 800g, cut into chunks. Shoulder or ribs work best for flavor - *Pork trotters/tail* - optional, 2-3 pieces. Makes the soup richer *Soup Base* - *Onion* - 1 large, quartered - *Tomatoes* - 3-4 medium, or ½ cup tomato paste - *Ginger* - 1 thumb-sized piece - *Garlic* - 3 cloves - *Scotch bonnet pepper* - 2-3, whole. Don’t cut it or it gets too hot - *Water* - 6-8 cups *Seasoning* - *Seasoning cube* - 1-2, beef or chicken - *Salt* - to taste - *Black pepper* - ½ tsp - *Bay leaves* - 1-2, optional - *Cloves* - 2-3 whole, optional for aroma - *Powdered anise or calabash nutmeg* - pinch, optional. Many Ghanaian soups use this *Vegetables* - *Carrots* - 1, sliced, optional - *Green bell pepper* - ½, sliced, added at the end - *Garden eggs/Aubergine* - 1-2, quartered, optional. Traditional in some homes *Quick method note* 1. *Steam the pork* first with onion, ginger, garlic, salt, and cube for 10 min - no water. This draws out flavor. 2. *Blend tomatoes, onion, ginger, garlic* and add to the pot. Boil everything till the pork is tender. 3. *Add whole pepper* and garden eggs last 10 min so they don’t break. The soup should be clear-ish, spicy, and light, not thick like groundnut soup. Serve with fufu, banku, or plain rice.#westafricanvibes😋
