I doubt they’d be dead. The depths are heavily connected to darkness in deltarune. I’ve seen some people say ‘they become the knight’ but I need more convincing. I reckon they’ll end up in some similar place to where Dess is right now

Im convinced the true ending to deltarune is SAVING gaster as a continuation as Undertale's ending. Like "theres still someone you haven't saved"

I cant think of any ways of how sans could actually know something is going on. this isnt the sans we know from undertale thats for sure. But the idea of him somehow knowing something was up and gave the bread on purpose makes me instantly forgive him for the end of chapter 4.
