It's German schnitzel made from beef cutlet. Here in the Midwest we have the more common pork schnitzel, but it's commonly called a "fritter" and is made with either a flattened pork cutlet, or sometimes ground pork. There is also chicken version simply called a chicken patty.

It's hard to beat an amazing chicken fried steak. The cut of the steak matters but it's all in the fry and the gravy.
