This is the iconic chicken pita souvlaki you’ve been waiting for — juicy, perfectly seasoned chicken, fluffy warm pita, golden potatoes, and my favorite homemade tzatziki. In Greece, chicken souvlaki is often served with mustard sauce, but I’m a tzatziki girl, so this version is exactly how I love it. For the Chicken (makes ~5 skewers): • 1.1 lb (500g) boneless skinless chicken breast, cut into 1-inch (2.5 cm) cubes • 2 tbsp extra virgin olive oil • 2 tbsp white vinegar or lemon juice • 2 garlic cloves, minced • 2 tsp dry oregano • 1 tbsp paprika • Salt & pepper, to taste For the Tzatziki: • 3 small cucumbers or 1 large cucumber, peeled & grated • 1 2/3 cups (400g) strained Greek yogurt • 2–3 garlic cloves, finely grated • 2 tbsp fresh dill, finely chopped • 3 tbsp extra virgin olive oil • 2 tbsp white or red vinegar • Salt & pepper, to taste For Serving: • Warm pita bread • Homemade fries (fried in extra virgin olive oil) • Sliced tomatoes • Thin sliced onions • Extra paprika Instructions 1. Marinate the Chicken In a bowl, combine the chicken cubes with olive oil, vinegar/lemon, garlic, oregano, paprika, salt, and pepper. Mix well, cover, and refrigerate for at least 20 minutes (longer is even better). Thread the chicken onto skewers  Bake in preheated oven at 425 Fahrenheit (220 Celsius) for around 25 minutes, brushing the chicken with olive oil a couple of times and baking on both sides until golden. 2. Make the Tzatziki Peel and grate the cucumber. Squeeze out the excess water. In a bowl, mix the yogurt, grated cucumber, garlic, dill, olive oil, vinegar, salt, and pepper. Stir until creamy and set aside. 3. Prepare the Potatoes Cut potatoes into thin slices and fry them in extra virgin olive oil until golden. 4. Warm the Pita Heat each pita in a pan and brush lightly with olive oil. 5. Assemble the Pita Souvlaki Spread a generous layer of tzatziki on the warm pita. Add the grilled chicken pieces. Add tomato slices, onions, and a handful of crispy fries. Sprinkle with a little extra paprika.
