I think the herbs are a great idea, especially if she’s doing cucumbers she can, can them up and use the fresh dill. Idk how easy garlic is but that a good idea too!

woodchips sir. I put 3-6in of wood chips down between plants and rows.. 1 it wont let alot of weeds to grow. 2 it keeps moisture in the dirt 3 you till it in after harvests and it adds to your soil for future plants

Your area looks quite arid. Have you considered trying hugelkulture? Sometimes called Hugel Garden. I think you’d find it very useful for your soil type.
