Mutton Dum Pukht (2 kg Mutton) Ingredients * 2 kg mutton * 1 kg baby potatoes * 500-700 g baby onions * 2 whole garlic cloves * 6-8 green chilies *2 tbsp freshly crushed black pepper * Salt to taste * 6-8 tbsp oil or ghee Method 1. Preheat the oven to 250°C. 2. In a large heavy-bottomed oven-safe pot, add: * Mutton * Baby potatoes * Baby onions * Garlic cloves * Green chilies * Black pepper * Salt * Oil/ghee 1. Mix everything well so the seasoning coats all the ingredients. 2. Cover the pot tightly. Seal the edges with atta dough or foil to trap all the steam. 3. Place in the preheated oven and cook for 1½ to 2 hours. 4. Do not open the lid during cooking. The mutton, onions, potatoes, and garlic will cook in their own juices and become incredibly tender. 5. Once done, carefully open the seal and gently mix. Chicken Cube Rice Ingredients * 3 cups basmati rice * 1 chicken stock cube * 6 cups water * 1 tbsp butter or oil Method 1. Soak the rice for 20-30 minutes. 2. Bring water to a boil and dissolve the chicken cube in it. 3. Add butter/oil and rice. 4. Cook until the rice is fluffy and fully done. Caramelized Nuts Topping Ingredients * wallnuts * Cashews * carrots * 1 tbsp butter * 1 tsp sugar (optional) Method 1. Melt butter in a pan. 2. Add nuts and fry until golden. 3. Sprinkle sugar and cook for another minute until lightly caramelized. 4. Sprinkle over the rice before serving.
