Cheesy Beef and Potato Soup **Recipe** 2 lbs Ground beef 3 lbs Yukon Gold Potatoes 3 celery stalks 3 carrots 1 onion 3 to 4 cloves of garlic 4 cups beef broth 2 cups heavy cream 1/4 tbs of butter 1/4 cup of flour 1 beefy onion soup mix packet 8 oz Sharp cheddar 8 oz Sharp white cheddar Chives (optional) Seasonings: Black pepper Smoked paprika Italian seasoning Nature's seasoning Kinder's Caramelized Onion Butter In a large dutch oven or pot, brown ground beef and drain any excess grease. Add seasonings. Add onions, carrots, and celery and cook until onions are softened and then add garlic. Cook for 1 to 2 mins and then add in beefy onion soup mix. Add butter and allow to melt, then add flour and stir for 2 to 3 mins. Add beef broth, bring to a gentle boil and add potatoes. Cover and cook 15 to 20 mins (or until potatoes are fork tender). Turn heat to low and add heavy cream, cheese, and chives. Mix well and serve.
