Раствор для засолки: На 1 кг мяса: 20гр нитритной соли 100мл холодной воды Вводим раствор шприцом в мясо. Ставим в контейнер, плотно закрываем и убираем на сутки в холодильник. Через сутки : Обсушиваем бумажным полотенцем. Посыпаем молотым черным перцем, сухим чесноком и тмином. Фактически можно добавлять любые!!! любимые специи. Вакуумируем мясо. Вакууматор и сувид есть на маркетплейсах. Можно найти очень недорогие Модели. Отдельно расскажу о них. Закладываем в сувид. Готовим 3,5 часа при температуре 62 градуса. Температура не должна превышать 70градусов! Далее мясо обжариваем на разогретом масле буквально пару минут до золотистой корочки. Даем мясу остыть. Укутываем в пленку и убираем в холодильник на ночь.
