And here’s the thing: so many fritters these days are mostly dough with a couple sad little apple chunks. That’s not for me. I want fritters that are loaded with apples—juicy, sweet Gala apples—where every bite is more fruit than dough. That’s the fritter I dream about. So, I headed into the kitchen and made these Bourbon Apple Fritters. The bourbon gives them a little extra depth (totally optional), but the real star is those apples. Warm, cozy, crispy, and glazed just right. Perfect for a late night snack. Here’s how I made them ⬇️ ⸻ 🥃🍎 Bourbon Apple Fritters Ingredients • 1 ½ cups all-purpose flour • 2 teaspoons baking powder • 1 teaspoon kosher sea salt • ¼ cup sugar • 2 teaspoons cinnamon • 2 large eggs • ⅓ cup milk (add a splash more if batter feels too thick) • 2 tablespoons bourbon • 2 medium-to-large Gala apples – 1 cup grated & 1 cup cubed/chopped • Peanut oil, for frying (enough to fill fryer/pot 2–3” deep) Bourbon Glaze • 1 ½ cups powdered sugar • 2–3 tablespoons milk (or apple cider) • 1–2 tablespoons bourbon Cinnamon Sugar (optional) • ½ cup granulated sugar • 1 teaspoon cinnamon ⸻ Instructions  1. Heat peanut oil to 375°F in a deep pot or fryer.  2. In a large bowl, whisk together flour, baking powder, salt, sugar, and cinnamon.  3. In another bowl, whisk eggs, milk, and bourbon until smooth.  4. Stir wet into dry just until combined. Batter should be thick but scoopable.  5. Fold in grated and cubed Gala apples along with any apple juice from the cutting board.  6. Drop spoonfuls of batter into hot oil and fry 2–3 minutes per side until golden.  7. Drain on a wire rack over paper towels.  8. Toss warm fritters in cinnamon sugar if you’d like extra crunch.  9. Whisk glaze ingredients and drizzle or dip fritters while still warm.
