Mentaiko & Squid Pasta

Ingredients
* 100 g pasta
* 100 g squid
* 30 g mentaiko (pollock roe)
* 10 g butter
* 1/2 tsp soy sauce
* 1 clove garlic
* 3 shiso leaves, thinly sliced
* Black pepper, to taste

Instructions
1. Cook the pasta according to the package instructions. Reserve a little of the pasta water before draining.
2. Melt the butter in a pan over low heat. Add the garlic and cook until fragrant, then add the squid and sauté briefly.
3. Reduce the heat to low. Add half of the mentaiko and 2 tbsp of the reserved pasta water, stirring gently until it forms a light sauce.
4. Add the cooked pasta, soy sauce, and shiso. Toss everything together until well combined.
5. Turn off the heat and mix in the remaining mentaiko.
6. Top with extra shiso and black pepper, then serve.
⭐️Tips
* Adding half of the mentaiko at the end helps preserve its fresh flavor.
* Be careful not to overcook the squid, or it can become tough.
* A squeeze of fresh lemon is a great finishing touch. 🍋
