Sweet Chili Shrimp Skewers Ingredients * 1 ½ lbs large shrimp, peeled and deveined (tails on) * 2 tbsp olive oil * 3 cloves garlic, minced * ½ tsp smoked paprika * ¼ tsp salt * ¼ tsp black pepper * ½ cup sweet chili sauce * 1 tbsp soy sauce * 1 tbsp honey * 1 tsp sriracha (optional for heat) * 1 tbsp lime juice * 2 green onions, sliced * Fresh cilantro for garnish * Wooden or metal skewers Instructions 1. Prep the Shrimp If using wooden skewers, soak them in water for 20 minutes. Pat shrimp dry. 2. Make the Marinade In a bowl, whisk together olive oil, garlic, smoked paprika, salt, pepper, sweet chili sauce, soy sauce, honey, sriracha, and lime juice. 3. Marinate Add shrimp to the sauce and toss well. Let marinate for 15–20 minutes. 4. Assemble Skewers Thread shrimp onto skewers, piercing each shrimp twice so they stay secure. 5. Grill Heat grill or grill pan to medium-high heat. Cook skewers for 2–3 minutes per side until shrimp are pink and lightly charred. 6. Glaze Brush with extra sweet chili sauce during the last minute of cooking for a glossy finish. 7. Serve Garnish with green onions and cilantro. Serve with rice, grilled veggies, or a lime dipping sauce.
