Charred Peri Chicken & Crispy Potato Bowls  A high protein dinner that’s loaded with flavour and volume without feeling like diet food 😮‍💨 it’s got juicy charred peri chicken, crispy air fried potatoes, fresh chopped salad, golden halloumi and a creamy peri yoghurt sauce 🤤 Perfect for meal prep or an easy weeknight dinner   🤌🏼 Ingredients (serves 2):  2 chicken breasts (125g each)
50g thick 0% Greek yogurt
1 tsp peri peri seasoning 1 tbsp peri sauce 
1 tsp smoked paprika
1 tsp lemon juice ½ tsp tomato puree  
Salt
Black pepper Peri potatoes 500g potatoes, cut into small cubes
1 tsp peri seasoning  1 tsp smoked paprika    Chopped salad 80g cherry tomatoes, finely chopped
80g cucumber, finely diced  1 small red onion, finely diced
1 romaine lettuce, finely shredded To serve: 60g halloumi, cut into cubes
Optional - 1 flatbread toasted & cut in halves (will add extra 100 cals per person) Creamy peri yoghurt sauce 70g thick 0% Greek yogurt 1 tsp lighter mayonnaise 1 tsp peri sauce  ½ tsp lemon juice 💞Place the chicken into a bowl with the Greek yoghurt, peri peri seasoning, peri sauce, smoked paprika, lemon juice, tomato purée, salt and black pepper. Mix well and leave to marinate for at least 15 minutes. 💞Add the potatoes to a bowl with the seasoning, salt and black pepper. Spray lightly with oil and toss. Cook the potatoes in the air fryer at 190°C for 22-25 mins until golden and crispy. 💞Cook the halloumi in a pan until golden on all sides. 💞Place the chicken in the air fryer at 190°C for 10-12 minutes until cooked through and lightly charred. 💞Make the peri yoghurt sauce and season with salt.  💞Divide the salad between serving bowls. Add the crispy peri potatoes, cooked chicken and halloumi cubes around the bowl. 💞Spoon the creamy peri yoghurt sauce into the centre. 💞Serve with the toasted flatbread wedges on the side if using.
